    Poor Man's Meatballs

    Typically, a poor man's meatball is putting eggs in your boiling water and cook in the same pot with pasta. This is what families used to do when they didn't have enough money for sausage or meatballs. Since you already have the hardboiled eggs, just peel and add them to your hot spaghetti sauce. It's an unexpected surprise that tastes superb with or without meatballs and sausage.

    Pickled Beets And Eggs

    This is a family recipe that doesn't take long to make especially now that you have the hard-boiled eggs. Here's what you'll need.

    • Hard-boiled eggs
    • Large can of sliced beets
    • 1 c water
    • 1 c vinegar
    • 1 c sugar
    • Dash (or more to taste) cinnamon

    Use about a half dozen to a dozen hard-boiled eggs to a large can of beets. Boil the beets, water, vinegar and cinnamon. Add sugar and continue to cook until dissolved. Put eggs in a glass container, add beet mixture, refrigerate overnight. Delicious.

    Sandwiches

    Think outside the box. Add sliced hard-boiled egg to your ham and cheese sandwich, italian sub, any kind of wrap you enjoy for an extra punch of protein. You can also fancy up the old staple 'egg-salad' sandwich by adding olives, pickles or whatever sounds good to you.

    Salads

    Go nuts with your salad. Add some sliced hard-boiled eggs, bacon, onions and tomatoes over a bed of spinach with your favorite dressing. Don't forget about Cobb salad, chopped salad, macaroni salad and potato salad. Do you have any you want to add to the list?

    Breakfast sandwich

    This is a great idea with ham, sausage or bacon. Once  'meat' is cooked place the sliced hard-boiled egg on top and then add cheese. Put the lid on the frying pan and turn off heat. Let the cheese melt and add to a croissant, english muffin, bagel whatever you want. It's quick, easy and yummy.
