God Bless the internet, you can find out how to do anything.  Finding ourselves with the usual large amount of left over fries after a visit to Five Guys Burgers, I decided there had to be something to do with them.  I had no idea there would be so many options.

It may be strange seeing a guy writing about recipes, but I'm in charge of Sunday morning breakfast at our house.  That automatically makes it more like brunch than breakfast.  My menu always revolves around what's lying around.  A large bag of fries from the night before and eggs.  Come on Google, bring us a miracle.

A quick search brought two possibilities, French Fry Skillet from My Bizzy Kitchen and Five Guys Breakfast from Simple Plates.  I like the idea of skillets because your basically throwing a lot of things together and covering it with cheese. Hard to go wrong with that plan.  By the way, I absolutely love the "Magic Bullet" when it comes to making omelets or scrambled eggs. a lot less work than a whisk.

The secret to breathing life back into the fries, is heat.  We chose olive oil, heating it until it's nearly smoking, toss in the cut the fries for about 3 minutes (love 'em crispy).  Add some chopped onions and green peppers.

Melt some cheddar cheese on top and done. Believe me, it tastes better than this picture looks.  I'd show you the finished product, but Polly doesn't allow photos before noon on Sundays, and it was all gone by then.

There's plenty of great recipes on the internet; Food Hacks offers a couple of different recipes, and Serious Eats has one with waffle fries.  Here's to no more wasted fries.
