Many vendors offer samples and bundle pricing. Past food items at the fair have included the Bacon Bomb, Deep Fried Oreos, Gator on a Stick, and a dish called The Thing from a vendor called It's A Utica Thing, which contained stuffed riggies, greens, and Provolone cheese between two pieces of tomato pie. The New York State Fair runs from August 26th through September 7th.
