Why, you ask? Well, asparagus is my favorite vegetable. Yes, I was the kid who enjoyed all the vegetables at dinner time that nobody else did--asparagus, brussels sprouts, spinach, green beans--I love them all. Having a 100 percent vegan diet, I can't think of a vegetable I don't like. So, in honor of my favorite vegetable, and because it's National Asparagus Month (for a few more days), I found some fun facts about asparagus.
