Every year for the past 22 years, The Rescue Mission of Utica has held the "Gourmet Guys to the Rescue" as a fund-raising event. It is always a great success and as I learned as a first time chef, a great time! For my first year, I decided to go with a chicken roulade stuffed with spinach and sharp cheddar with a butternut squash puree! I was lucky enough to have the help of my very talented cousin, Colin, who is a chef at The Olive Garden. Olive Garden actually is already involved with the Rescue Mission. They donate leftover food every Wednesday.

I want to thank everyone who turned out to support the Rescue Mission. The whole experience was a blast and it felt very rewarding to be a part of this great day. Overall the event raised over $22,000 for the Rescue Mission. Even though we didn't win the top prize, it was a great experience.
