Cornell University says Easter is more than chocolate rabbits and dyed eggs. And especially with the Mohawk Valley's diverse population, Easter is prime time for lamb.

Sales for lambs for meat continue to stay strong. If you are a local farmer and like raising lambs, the market demand for your animals looks very strong. Hot House lamb sales, lambs that weigh between 25 to 50 pounds for the Easter market are averaging between $120 to $150.00. Lambs that target the ethnic and Muslim markets that weight between 60 to 80 pounds are selling for $200 and market lambs that weight between 110 to 130 pounds are also selling for $200.

In an earlier report from Cornell's monthly newsletter, Farm Flash, the number of sheep and lambs in New York is on the rise.  January reports put the count at 80,000, up 7% from 2014. Market lambs comprised 80% of the market inventory while market sheep accounted for the remaining 20% of the inventory.
